    how to make 肉松

     

    很久很久以前,朱女士曾经给我做过鱼肉松,虽然很咸,但是吃得很激动,因为当时觉得朱女士很神奇。

    前阵子在网上看到过做肉松的方子,上周四五下定决心周末要挑战一次,Finally,我成功了。

    1. 里脊肉切成中等块,3cm×3cm×3cm?差不多就可以了,没那么矫情

    2. 水开了以后肉块汆水,撇净血水

    3. 再整一小锅水,放葱姜酒,放五香调料(八角、桂皮、花椒、小茴香、桂枝等等),水开以后下肉块,大火再开以后改小火炖1小时

    4. 捞出肉块,晾凉

    下面开始需要耐心

    5. 拆肉,把肉块变成细丝状的碎肉,方法是把肉块装进保鲜袋(袋口扎紧),用擀面杖碾压,先竖着敲肉,这个有点像松肉锤的道理,差不多敲扁了就像擀面一样擀(擀面杖真的是个好东西,不仅可以防身,做各种面食,还可以派这个用场)。考虑到碾压以后的面积,家里恐怕不大会有那么大的保鲜袋,所以这一步需要将肉块分批进行好几次。碾好以后把肉倒进干干的小盆子,用叉子叉松,碾压以后虽然碎了,可是肉呈饼状,结成一块,需要很有耐心的用叉子叉得松松的。要不然就不是肉松了,是肉饼了。为了做到均匀,叉子也需要分批叉好几次

    6. 炒。锅里放很少的一点油,稍加热以后用菜铲抹开,用中小火炒肉,肉出香味以后改小火,用酱油糖和味精做调味汁,搅拌以后均匀的倒进锅里,翻炒,刚倒进调味汁的时候上色肯定不匀,多翻炒就好了。未免味道下重了,调味汁我是一点一点加的。靠小火的作用给肉慢慢的脱水,这个过程很快乐,因为整个厨房都会弥漫着那股香味。吃不准的话可以夹一点尝一下,因为炒到什么程度和个人喜好有很大关系,有的人喜欢半干的,可以时间短一点,我喜欢那种酥松的,那么就时间久一些。

    7. 炒好以后趁热放进密封罐

    其实我还加了剪碎的海苔,可是加了海苔却没有加白芝麻看上去不是很诱人,下次可以买点白芝麻一起炒炒。

    不要问我为什么不上照片,就好像我不上个照片就不能证明我做了顿饭一样,好了,汇报完毕。
